Steps

  1. Peel and wash the cassava roots thoroughly, then grate them finely.
  2. Press the grated cassava to squeeze out the liquid — traditionally in a ruguma (woven strainer), at home in cheesecloth under weight.
  3. Let the pressed pulp dry, then sift it into a fine flour.
  4. Spread an even layer on a hot flat griddle and press it into a round.
  5. Cook a few minutes per side until firm and lightly toasted, then dry the rounds fully before storing.
